Thin-sliced chicken breast is perfect for making sandwiches and chicken salads. It’s important not to overcook it so it stays soft and juicy and not hard and dry. Fresh chicken from Perdue is a clean, one ingredient choice, too. Rub it with seasoning to get the taste you want. Smoked paprika looks especially nice. I think it lends the chicken a bacon-y barbecue flavor. Makes preparation for parties easy, too. After cooking just place it in a bun topped with a little honey and lemon. I like to serve it with cucumber “fries” for a fresh crunch!. Photos show how I used leftovers in a baked cream sauce, and with herbs ifor a quick roasted sheet pan dinner.
