A unique curved bolster supports the professional pinch grip, with thumb and index finger on the blade, for safe cutting and less fatigue. The blade was redesigned with a broader curve in the front to facilitate the rocking motion of Western cutting, while the straight back is ideal for the Asian chopping motion. Amazing knives. I will be sticking with the Pro Series from now on (originally purchased a set that included Twin and the level below). The only improvement would be if the set were to come with protective sheaths, as the larger one does not fit in the wood block from the aforementioned set. Guess I will just have to buy a better block to go with the new Pro Set I am beginning to build.
