The name was created because it is a filled double biscuit that looks like a kissing mouth when viewed from the side. The fine hazelnut biscuits are filled with coffee refined a chocolate cream.   • The Pasticceria Rippa still manufactures the famous Baci di Dama exclusively in a hand-made process. This small masterpiece is still made according to the original recipe today and is therefore just as delicious as it was when it was created. The Baci di Dama are the historical product of Pasticceria Rippa. They were made for the first time in sale where the tradition is still preserved today
  • In 1958, Sergio and his brother Marco founded the Pasticceria Rippa in Sale (a town in the province of Alessandria), which in no time became a reference point for the most demanding palates. Even today, the pastry shop is based in Sale and still produces traditional Baci di Dama and soft amaretti: authentic and of high quality.

I had never had these before but have loved Italian made sweet snacks for their lack of overpowering sweetness. These remind me of a larger version of the delightful Ameretti buttons but have a rich, fudgy layer between two cookies. Delicious, and will easily satisfy the need for chocolate. Cookie is light and airy. The combination is delightful.
