Are cashews usually cooked or raw?

Most cashews are cooked. In fact, even cashews labeled as raw have been roasted once in order to remove the shell. The shell is considered toxic and should not be eaten. So-called raw cashews have simply not been roasted a second time, as have most snacking nuts.

What kind of cashews are best to use in recipes?
