I believe the water tray keeps the meat moist and also catches the juices from the meat. I put a piece of aluminum foil over the heat shield to aid in cleanup when I'm done.

The water keeps the humidity up to keep your food moist. Without it, your food will get really dried out.

The water turns to steam & keep the meat moist

I dont use the water because if you are long term "smoking" something, then the temp will never be high enough for any vapor to be produced.  And if you are short term smoking, then the heat will have to be higher (and would produce vapor) but the cooking time will be must shorter and not enough to dry out the meat.

What is the function of a water tray when using wood chips in electric smoker?

I would recommend against using this or any electric smoker indoors. But, if you decide against my advice and the advice in the owner's manual, you'd better have some GOOD ventilation. Even without wood chips, this smoker puts out a lot of smoke. If it looks like rain, I put mine on the front porch so it doesn't get wet while cooking. This is a good question because where you use it depends greatly on the weather. It is electric!

The owner manual states to not use it indoors, but I used mine in the garage with all the doors left open

The Box can get warm and not for inside. I did use it in the garage with the side door open and used a fan for security. I mainly do use it outdoors.

It seems safe enough. Of course, you don't want to use it outdoors when it rains, or when there is a good chance of rain.

Easy smoker to use, hardly any set-up and I love it. The manual says do not put on patio or garages but I don't have any where else so I went to Home Depot and got .89 tiles and put underneath just in case something did come out. Everything stays inside though.

I've been BBQ'ing since i was 15, but wanted to try a smoker for a long time. I got a hold of this smoker and it's been good. Simple, easy to use ( i never read the manual).. I would recommend nt to use it in the garage as you'll be smelling the smoke flavor for a few days in your garage and into your house.

Perfect Lil'Smoker or Starter Smoker

I purchased this smoker online and was very happy with it when it arrived until my husband put it together and the inside of the door was bent inward so it didn't close fully n wouldn't hold heat as well as it should. I called the company that manufactured this product and they sent me a replacement door right away. I was pleased with their urgency to fix the issue. I think well be very happy with this product from now on!

It was easy to assemble.  Has adequate instructions for assemble and use.  A little bit weak on usage.  Where the water goes and where the chips go was not clearly defined.  It reached temperatures slightly above 200 degrees and smoked everything in just about the suggested times.  The meat was great.

Smokey Mountain 26" Electric Smoker

I used it to smoke/cook one hamburger pattie and smoking 5 pr-cooked turkey dogs. I should've used more wood chips,best to fill wood chip pan full to just getting the cover in place. There should be an indicator arrow to properly set the heat dial otherwise the setting is just a guess that's why I only gave 4 stars.

I bought this smoker for my husband's graduation in May  2018 from college the first one I purchased was bent when I received it I sent it back and they sent me another one for a while it cook pretty good the door was always kind of hard to shut because the lock really isn't strong enough to hold it close we tried to smoke a turkey for Thanksgiving and my husband had to tie a belt around the door because the lock just isn't holding it anymore ,so this is why I have to give this a very low score  very disappointed.

The door would not stay shut even with the smoker on a flat, solid, & even floor. The small magnet which holds the door shut is too small/not strong enough to hold the door to the smoker shut. The temperature never showed above 185 degrees even when set on the "high" setting. After 9 hours on the highest setting (185 degrees) the lone rack of ribs was done and tasted great, but I returned the item the next day.
