I love cheese, but because I'm getting older and wider (yes, wider, not wiser), I limit my intake. So, when I eat cheese, I want to really enjoy it and not waste the calories and fat on something mediocre. I don't even remember why I chose this cheese over others in the display case--it must have been fate. Now, this is the first and only choice of everyone in my house, including the 12 and 14 year olds. And the only ingredients are pasteurized milk, cheese culture, salt, and enzymes. That's it. The flavor is slightly sharp, smooth, full, and substantial tasting. The only problem is the aftertaste is so good, it's hard to stop eating it!
