    Several customers have pointed out that many of the reviews for this model 12" pan are actually reviewing the prior model which had a larger cooking surface and lower differently shaped sides. This has disappointed several people, understandably. I have, not the last model, but the 12" skillet that preceded it. It and it's 10" stove mate are both perfectly designed in form and function. (Still can't figure out why they felt the need to change a winner, but there it is) Now to the point. There was a third item of what I consider the 3 best Tramontina pieces and that was, and still is, the Tramontina 4-Qt Tri-Ply Clad Covered Casserole. It comes with two lift handles and a steel lid, BUT the cooking vessel itself was almost a duplicate of the old 12" Skillet with slightly differently shaped side walls. For those unhappy with their current 12" Skillets shape, I suggest you investigate the Casserole. You give up the skillet handle but gain an extra use vessel, both skillet and casserole, The bad news is it is somewhat more expensive, but perhaps worth it to those who want the extra size and utility of being easier to fry a whole chicken or move from the stove top to the oven. Just a thought.

    Unfortunately, Tramontina must have shrunk the size of the inside flat cooking surface. It measures 8" across, and for a 12" pan, it is more "wok like". OK for stir-fries but doubtful it would hold more than 3 small to average pieces of meat or burgers. Quality of workmanship seems fine, probably comparable to other try-ply cookware (especially for the price). However I am disappointed in the way this one is contoured. Would not buy again or recommend, unless you want a short-sided wok.

    The review on Cooks Illustrated led me to this pan. Don't be fooled, however. The reviewed pan, number 80116/509, was the old model, and had a cooking surface diameter of 9.5". The current model, number 80116/546DS, has a cooking surface diameter of just over 8". This is only slightly larger than the 10" model. I wanted a 12" skillet to cook for my entire family. This pan is only big enough for 3 chicken breasts at the most. It is a shiny, beautiful, and nicely made pan. But because the interior is so small, I will be returning immediately. Too bad!

    I bought the 14 piece set and everything is awesome except for the shape of the 12" Frying Pan, which is why I'm putting the review under this rather than the set. The frying pan has an almost wok-like curvature with a relatively small flat surface area for cooking. The pan would be good for stirfry, but not really for searing more than 2 or 3 steaks, burgers or chicken breasts or anything else that requires a larger internal flat surface area. I bought the entire set 14 piece set, but I'll be replacing the 12" fry pan with an All-Clad Tri-ply of the same size which has a better contour, and comes with a lid. Everything else about the set and the other pans is perfect and I highly recommend it!

    I agree with the other reviews. Just recieved this pan and have not used it yet. Seems like a well made product for China. Model # is 83116/020. Not the model # listed on the website. The label on the box it came in even says 80116/546DS. The actual flat cooking surface is only 8 inches. Same as my current 10" fry pan. This pan is more like a saute' pan, with the curved edges for easy pouring. Not what I wanted but I'll keep it anyway. Just a bit dissapointed.

    For a long time I truly obsessed about looking for he right pan and kitchen tools in general. After truly absurd amounts I heard the all clad was best, but with that way out of my price range the Tramontina is a very close 2nd. After even more obsessive search, I found out that for whatever reason all of the reviews on the product are actually for the previous model which was truly annoying when that pan is essentially impossible to buy online. I learned they did change a few things on this pan, including the name, handle, finish, name, and disappointingly the cooking surface. However, I can now say that despite all my intense fears that it could not live up to my intense expectations and that it would be a waste of money, I was wrong and the pan is truly amazing. Granted I have only used the pan twice, but its truly a cheap work of art. I have worked for several years with a set of horrible cheap non stick pans that were warping to the extent the lid did not fit on any more. For the longest time I almost believed I was crazy. Why did I struggle so much with basic cooking tasks such as sauteing onions without scorching them Once I got my hands on this Tramontina pan, all fears were put to rest. While the cooking surface is reduced by about a inch as most reviews have noted, this is only 1 inch less then the all clad pan its often compared to, and so far it's not really that noticeable. Due to this concern I even ended up a sous chef who told me that an 8 inch cooking surface could be ideal because it fits so perfectly with the average stove top and there by gets better heat distribution. Although the slightly smaller surface is disappointing, it does not really effect my cooking, and its still a very roomy pan, with tall sides, that I can see using to cook liquids with later on. Overall as a pan, it more then does its job, the heat distribution is superb, and the handle feels great in my hands. As I alluded to earlier onions cooked almost absurdly well for the price I paid for this pan. It overall simply cooks very well and efficiently. The pan also has great heft and I feel it will last for quite some time, with its great construction. My only complaint so far is that when I used it, it got remarkably scratched up on the cooking surface. Granted I was using a brand new metal spatula with a pointed edge I used to split apart vegetables I had missed. but still its got weirdly scratched up, for one use. However, it does not really matter because it wont effect cooking ability and would happen inevitably, but I still don't get how it happened that bad. Overall despite the negative reviews on here I bought the product based on reviews of the prior model, and despite some changes this pan has so far exceeded my expectations in almost every way imaginable and it is a pleasure to work with.

    The tri-ply construction is as advertised, so the skillet heats evenly, no scorching, etc. But what I cannot overlook is the extremely shallow slope of the sides. Much shallower than the photos here make it appear. This reduces the usable cooking area of the pan considerably. I have to use this 12" skillet as if it's a 10" skillet due to the miniscule cooking area. It may cost over twice as much, but spring for the all-clad. Your 12" skillet is your primary workhorse. Splurge on it. My tramontina is now relegated to frying bacon at the deer lease, where I just need a cheap magnetic pan for the portable induction burner.

    The heat distribution is great! Evenly browns meats and yet can fry an egg without browning or scorching the bottom of it. I have not used it in my oven as yet, but the important thing to remember is not to go above the recommended oven temp. I recommended Tramontina cookware to my daughter, who is a graduate of the Berkeley Culinary Institute in California. I could not rate the durability, as I've only had the frying pan for 2 weeks. So far, so good.

    I love this pan! I look at expensive pans the pros use and I think to myself, mines better! Keep in mind that if you are not used to cooking on stainless, you will not have to heat the pan as hot as non stick. I cook everything in this pan including my omlettes with ease, no sticking no burning.

    Tramontina tri-ply cookware is what you might expect if you were to pay three times as much money. Incredible quality and great value. Heavy sidewalls, all polished solid cast handles, mirror finish. Wonderful!

    • A. This is an open fry pan, and unfortunately it does not come with a lid. A good alternative in the same product line may be the Tramontina 5 Qt Deep Saute Pan (Item 80116/552DS) which has straight walls and comes with a lid.
