Instructions: Makes about 12 12-oz servings. You Will Also Need: 1 Smoked ham hock (Can substitute smoked turkey leg), 28 oz can of Italian tomatoes, 2 c. Onion, 2 c. Celery, 2+ Cloves garlic, 1 Green pepper, 1 lb smoked kielbasa sausage (can substitute Chicken Sausage), 2 whole chicken breasts. Cooking Time about 6 hours. What You Need: 12 c. Water. 1 T. Salt. 1 Smoked ham hock (Can substitute smoked turkey leg). 1 - 28 oz Italian tomatoes, chopped. 2 C. Onion, Chopped. 2 C, Celery, sliced. 2+ Cloves garlic, minced. 1 Green pepper, chopped. Freshly ground pepper. 1 lb smoked kielbasa sausage, sliced on a diagonal (can substitute Chicken Sausage). 1 or 2 whole chicken breasts, sliced into small pieces while raw or slightly frozen. See our website for vegetarian suggestions. Here's What You Do: Rinse, drain and pick over beans. Place beans in an 8 qt. pot with water, salt, ham hock or turkey leg. Add bouquet garni (bundle of herbs) from Minnesota Heartland Eleven Bean Soup mix. Bring to a boil, reduce heat and simmer covered for 3 hours or more. Add tomatoes, onions, celery, garlic and green pepper to pot. Bring back to a boil, reduce heat and simmer covered for 1 1/2 hours. Add pepper to taste, sausage and chicken and simmer uncovered for 40 minutes. Remove bouquet garni before serving.
