A RAZOR-SHARP, RIGID BONING KNIFEThe Shun has added a rigid boning/fillet knife to the Premier series. As you would expect, this beautiful knife is the right tool for two key kitchen chores—boning and filleting. When boning, the narrow, sharp, curved blade gets in close to the bone, making it easy to separate meat from bone. Shun's extremely sharp edge even cuts through fibrous material with east. It’s perfect for trimming the silver skin from a tenderloin or roast or even making your own cutlets. The narrow blade reduces the drag as you cut against the meat, so cutting is fast and easy. When it comes to filleting fish, the blade's six-inch length is just right to glide through the body of the fish, quickly removing bones and skin. The contoured Premier handle provides a secure grip for excellent control.The Shun Premier Boning/Fillet Knife is part of the beautiful Shun Premier line, which calls to mind the hand-forged knives of ancient Japan. While each knife still takes at least 100 handcrafted steps to complete, the materials Shun uses are among the most advanced in the industry. Each blade has a cutting core of Shun's proprietary VG-MAX “super steel” to take and hold a precision edge. The layered Damascus cladding supports the core and provides additional stain resistance. Near the edge of the blade, where the steels meet, an undulating line is formed—similar to the hamon formed when samurai swords are tempered using a traditional clay-baking technique. The hammered tsuchime finish acts like a series of hollow-ground cavities to reduce drag. The handles nestle comfortably in the hand, while the embossed end cap adds balance and beauty.

    Another Great Shun Knife

    I recently added the Premier Boning & Fillet knife to my growing Shun Premier collection of knives. This knife, like all of my other Premier knives, is scary sharp, which is exactly what I've come to expect from Shun. I've used the knife for several BBQ trimming tasks, and it's performed flawlessly. I can perform highly precise trims that look perfect, with no ragged edges, just nice clean cuts. The shape and size of the knife is perfect for my needs, and of course, it's strikingly beautiful like all of my Shun Premier knives. It's another great addition to my Shun Premier collection!

    Great Knives - of course :-)

    Shun knives are among the best! I bought this knife for my son who has quite a few Shun knives. He carries them wherever he goes if he thinks he'll be preparing a meal. He is a very very good amateur chef and takes pride in the tools he uses to prepare the meals. All the best, Richard

    Sharpness with elegance

    This knife is as sharp as it is beautiful. I am not a chef or a professional, just the average guy in a kitchen but I hate fat on my meats. Trimming excess fat from any meat is a breeze with this knife! All the knives I've owned prior to this one, I had to use a sawing motion to cut fat off. This knife, I just rest on the meat and pull back, it really is like a hot knife through butter! Chicken fat and beef fat cutoff so easy, its scary! Want to slice and dice a cheap Flank steak to cube up, this is your knife! As a test, I took a rip tomato and rested this knife and just pulled back. Under the blades own weight, it had pierced the skin and cut about half way down(1.5""). I know it is not meant for tomatoes but I wanted to experiment. As fo...
