Now Foods Raw Pecan Halves and Pieces are a product of the USA, vegan, non GMO, fresh and delicious! Being that they are raw, they have a slight crunch while retaining their natural moisture. An excellent source of healthy fats, eating regularly may help to lower bad cholesterol. They are in the top 15 antioxidant-rich foods, high in fiber, a good source of protein and vitamins. My April 2018 order arrived with a Sell-By Date of December 2019 (date is printed below the nutrition label, black ink in an area that is brown, so it is hard to see in low light - see photo). Now Foods Pecans arrive in a fairly thick plastic ziplock style bag making storage easy. All nuts should always be sealed and stored in the fridge (or freezer for longer term) to maintain their freshness. One of my favorite ways to enjoy pecans is to LIGHTLY roast them. My recipe is simple: 7 minutes in a 350 degree oven on a parchment lined cookie sheet. Be sure to spread them out, do not overcrowd. Use the middle rack in oven and be careful not to over-roast: you only want to heat them through. If you need to do a large portion at once, take them out and stir them around at the halfway point, and maybe go a minute or 2 longer on total time. Rule of thumb when roasting, remove them from the oven when you start to smell them, you don't want to burn (and ruin!) them. The heat activates the natural oils and enhances flavor. They are delicious eaten while warm. Roasted pecans have a nuttier flavor and a little more crunch to them. I do a large tray and after they've cooled I store them in small, airtight (2 oz midget) containers, making perfect snacks on the go. For appearances in baking: Keep in mind that this is a package containing “halves and pieces” (see photo). Some cookie or dessert recipes might be calling for halves. I'd say at least half the bag (if not more) was halves, so if you're planning to make a batch of fancy cookies, you'll find plenty of halves here. Enjoy!
