I used this to make keto friendly bread with almond flour. Without this, my bread was very flat. After using this with a same recipe the bread became very fluffy . I recommend it.

Works well but...
I've never used this type of thickening agent before but being on a low carb diet, I gave it a shot. It only takes a very small amount to thicken but the end result is a very strange gelatinous textured sauce. Much different than a typical sauce thickened with cornstarch, roux or slurry. Not a fan.
