A must-have ingredient for those who make their own hummus. Other ingredients you will need are one or more cans of chickpeas, a little salt and pepper to taste, a touch of cummin, a little garlic (one small toe), the juice of one lemon, a little olive oil, and a food processor to grind and mix all of the ingredients together. HINT: The real Secret in making great hummus is to remove the husk off of each chickpea, one by one. This will provide a more smooth textured hummus. You will also want to add a little of the juice from the can to thin the hummus to your desired taste. It should be creamy and should have a thickness that is somewhere between tomato sauce and tomato paste.
When one makes hummus at home, one needs sesame paste. Joyva sesame tahini has the correct consistency, easy to remove from the container (can) and makes my hummus quite creamy and tasteful. It is not available in my local Walmart so I purchase it 4 cans at a time from Walmart online.
I've bought a few jars of this brand and it has consistently been very good. I do check the "sell by" date on the label as tahini can go bad (which might be why others have complained of a very bitter taste). It does settle over time, and when you initially open it you will probably be stirring the product for a good 5 minutes to get mixed to a smooth consistency. I love to make homemade hummus, and using tahini gives it that extra flavor and makes it more authentic. Be sure to refrigerate your tahini after opening and don't let it sit in the fridge for too long as it doesn't have any preservatives. (I would say use it within a month or two.)
