My family LOVES Healthier Way's Sweet Potato Pancake Mix!!! We make a big batch of them over the weekend and enjoy what we can and then freeze the rest to enjoy all week long. What a time saver for us and a GREAT way for us to enjoy our breakfast before getting the day started. We top them with raspberries or strawberries or we add pecans/walnuts and cacao chips - What a treat!!! We are so happy that Walmart is now selling this (and these type of healthy products) for our family's dietary needs and meal plans. We LOVE this product so much that we purchased the Sweet Potato Baking Flour too! And we shipped these items to all of our family and friends throughout Texas, so they too can enjoy them too! Ingredients: BROWN RICE FLOUR, RICE FLOUR, TAPIOCA STARCH, SWEET POTATO FLOUR, CANE SUGAR (DRIED CANE SYRUP), SORGHUM FLOUR, SOY FLOUR, MALTODEXTRIN, BAKING POWDER (SODIUM ACID PYROPHOSPHATE, BAKING SODA, CORNSTARCH, MONOCALCIUM PHOSPHATE), CINNAMON, NATURAL VANILLA TYPE FLAVOR, XANTHAN GUM, UNTREATED SEA SALT.
Instructions: Pancake Directions: 1 cup Healthier Way Sweet Potato Pancake Mix; 3/4 cup of milk or water; 1 egg; 2 tbsp oil. Makes approximately 6 medium pancakes. Beat together egg, milk (or water) and oil. Add pancake mix and stir to combine. Allow batter to rest for 10 minutes. Pour 1/4 cup of batter onto a pre-heated, medium-high, lightly oiled griddle. Cook until pancakes bubble and edge starts to look dry. Turn once and cook until golden brown. Serve immediately. Extra pancakes can be cooled, wrapped in plastic and frozen. To reheat, remove wrapping and microwave pancakes wrapped in paper towel until hot, approximately 45 seconds. Store in a cool, dry place.
