Q. My fries always come out burnt on th outside and uncooked on inside. I tried temperatures 255-275F for 5 to 10 mins. Would any body help me out?
- I was a chef for 15 years, and have a few tips. Cut your fries and put them in a bucket of ice water with a little lemon or reallemon juice - not much, it's just to keep them from rusting. Store overnight in the fridge. Heat the fryer to 332 degrees. This keeps the oil from burning and makes nice fries. If you like crispier fries that really hold the ketchup you'll want to blanch them. Just fry them for a little while depending on the size of the fries and pull the basket out of the oil for 3-4 minutes. The fries should look droopy, but not done. Then fry them till they're crispy, lifting from the oil and shaking basket once or twice. If you follow these steps you'll have fries like they make in a steak house. One thing to note: This is a small fryer and the temp will go down quickly once you put food in it. - After cutting fries soak in hot water for 20 minutes. Drain and dry them thoroughly. Heat oil to 325. Cook fries 3 1/2 to 4 minutes. Take them out of the oil. Wait anywhere from 10 minutes up to 2 hours with fries out of oil. Heat oil to 375. Cook 6-7 minutes (until slightly browned). Works out perfect! - my husband is a chef. if your making home made fries from potatoes than fri them on the lowest setting till a light golden brown than take out and turn the deep fryer up to 375-400 when up to temp. put the fries back in until a darker brown this will make the fries softer in the middle and crunchier on the outside. - You can use the oil again and again, using good judgment. If you clean the particles out, or even strain it, it isn't a problem. If you have fried something, that is coated with flour and the oil turns murky, of course you would want to change it. Some are saying to put it in the fridge, and that isn't a bad idea, however we never do that, nor did the long line of country cooks I come from. - The container that the oil is in is removable, so you can easily store it in the fridge to keep the oil fresh. Depends on your taste, but I wouldn't reuse the oil if I had fried fish in it. - I bought the fryer mostly to make chicken wings, and I only change the peanut oil after using the same oil 6-8 times. Incidentally, if you decide to make wings...be sure to cook them until they all are floating at the top. Otherwise, they won't be quite done inside.by missymoo2143/9/2016Was this answer helpful? - In most cases, the oil can be used more than once. Some meats release large amounts of juices and dilute the oil, requiring the oil to be discarded. Oil used to fry fish or other strong flavored food should also be discarded.
