I bought this for a new Turkey recipe last Thanksgiving and used for another for Turkey gumbo. It works great and cleans easily . The idea behind the roast Turkey is to dry heat the pan to near 500 degrees placed on a pizza stone. Remove the pan, add a few Tabs of oil, add the preped bird covered with foil @ 425 for 45 minutes & lower to 325 with foil off till done. The result is both the white & dark meat are perfection at the same time and no sticking. This pan easily did a 22 pounder. If you're concerned about coated pans, this is a great alternative.
