Purchase was a good decision

I finally broke down and bought this because it appeared that it would improve my spaghetti and fettucini making workflow and indeed it did exactly that. I already own (two!) sets of the Kitchen-Aid OEM pasta rollers and all their cutters that I have used thousands of times, so I would consider myself fairly expert. I make pasta usually a couple of times a week and also have the Kitchen-Aid extruder set as well as a whole host of other dough handling tools, molds, and multiple kinds of cutters. but when I first saw this device and realized I would be able to sheet and then immediately cut without having to hang the sheet first I was immediately attracted. Provided your dough is dry enough you can indeed do exactly this. Now I sheet, cut, and then nest pasta onto a silicon mat thus saving myself quite a bit of time and don't need to use anything to hang the pasta on while changing from roller to cutter.
