Gorgeous Pan Cooks Beautifully

I was going to buy a Staub 11" pan for about $150, then I saw this on Walmart. I'm so glad I got it instead. Money isn't the only concern, but it is one. At $59, this was so much more affordable, and it is beautiful. The finish is rich and deep, and looks as good as the high priced pans. The interior was nicely finished too. This is a big skillet, and it's heavy, but not quite as heavy as the same size Staub. That's because the sides are narrower than the bottom, which I appreciate. The helper handle protrudes far enough to actually help. I've braised meat dishes several times, and it cooks beautifully. Enameled cast iron requires a learning curve. I preheat my pan on a heat I'd call right above medium low, (but not quite medium). Once it's heated, (and I give it plenty of time, about 10 minutes), I swirl in a small amount of oil, usually canola, sometimes olive. Give that about 30 seconds to heat, and add my food. Once it hits the pan, I don't disturb it for at least 5 minutes. It will still brown and form a crust even at this lower temp, and you don't have to worry about setting off the fire alarm. I was trying to sear meat at too high a heat before, and was continually setting the alarm off. This method works perfectly, with no smoke in the kitchen. (My exhaust fan may as well not be there, as inefficient as it is). After I remove the food, I add hot water to the bottom of the pan, and let it soak while I eat. It is very easy to clean after soaking, and almost never needs any scrubbing. Towel dry, and place on heat to make sure it's dry. Then I wipe the interior lightly with a cloth I keep in a ziploc bag infused with a little bit of canola oil. I use this method on all my black interior enamel cast iron pieces, and they all are getting better and better with every use. These extra steps are well worth the small effort, and will keep your pans in beautiful condition.
