Works great. I have had henckel knives for 40 years. I only see one change the thickness of the blade is about 1/2 as thick as my old henckel, the old one's are red twin signature. I do love the Hollow Edge.

great prep set
This is such a useful set. The smaller blade is great for peeling, trimming and herb prep. The Santoku is great for all my larger vegetable prep. The thin blade profile gives me thin accurate cuts and slices. The forged blades are very strong and stay sharp for a long time. The handles are super comfortable to hold

This Forged Synergy Santoku knife is beautifully made and an exceptional handle design. Chef knife or Santoku knife both are versatile kitchen knife nowadays. These two is a must-have knife for exploring young cooks. This sturdy, sharp 5" knife will do just fine along with the 3" vegetable kudamono paring knife, great for peeling and cutting fruits. Indention on the blade creates barrier between the food and the steel, preventing food from sticking. Forged knife is durable and could stand rusting and corrosion. It is so sharp to go through any meat, vegetable, herb, or fruits. Dishwasher safe, hand washing is recommended.
