Instructions

Step 1

In a large pot, heat olive oil over medium heat. Add diced onions, diced carrots, and sliced celery.

Saute until softened (about 5 minutes).

Stir in minced garlic and saute for an additional 30 seconds.

Add rinsed dried split peas, low-sodium vegetable broth, bay leaf, dried thyme, salt, and black pepper. Stir to combine.

Bring the mixture to a boil, then reduce heat to simmer. Cook for 30–40 minutes or until split peas are tender.

Step 6

Add diced potatoes to the pot and cook for an additional 10–15 minutes until potatoes are cooked.

Step 7

Remove the bay leaf from the soup.
