In a large pot, heat olive oil over medium heat. Add diced onions, diced carrots, and sliced celery.Step 2

Bring the mixture to a boil, then reduce heat to simmer. Cook for 30–40 minutes or until split peas are tender.Step 6
Add diced potatoes to the pot and cook for an additional 10–15 minutes until potatoes are cooked.Step 7
