Using Traeger Mesquite Pellets, preheat the Traeger pellet grill with the lid closed to 350°F.Step 2
In the bowl of a stand mixer fitted with the paddle attachment, beat the softened cream cheese and mayonnaise until combined. Fold in the the cheddar, 1/2 cup of Parmesan, jalapeños (finely diced with the ribs removed but with the seeds), cooked and chopped bacon, and chopped scallions.Step 3
Scrape the dip into a cast iron pan and smooth the top.Step 4
In a small bowl, combine the panko, remaining Parmesan, and melted butter. Sprinkle the topping over the dip. Transfer the pan to the grill grate and bake until the top is lightly browned and the dip is bubbling. 20 to 30 minutes.Step 5
Serve with chips, crostini, or vegetables for dipping.Step 6
