Instructions

Step 1

Cook chicken according to package instructions. Shred and set aside.

Step 2

Dice onion; mince garlic; drain and rinse beans; juice limes

Step 3

In a large pot, heat olive oil over medium heat. Add diced onions and saute until softened (about 5 minutes).

Step 4

Stir in minced garlic, ground cumin, and chili powder. Saute for an additional 30 seconds.

Step 5

Add diced tomatoes with their juice to the pot.

Step 6

Pour in the chicken broth and bring the mixture to a simmer.

Step 7

Add corn kernels, black beans, and shredded chicken. Simmer for 15–20 minutes to allow flavors to meld.

Step 8

Stir in lime juice just before serving.
