Instructions

Step 1

Cut up the cheeses into cubes.

Step 2

To cook the chorizo, add it to a skillet on medium heat, break down into smaller pieces with a spoon and cook for 7-10 minutes.

Step 3

Add all of the cheeses, cooked chorizo, refried beans, diced onion, and evaporated milk to a slow cooker.

Step 4

Set your slow cooker to high for 2 hours or low for 4 hours.

Step 5

Remove the lid and mix the queso every 30-45 minutes or as needed to avoid any burning on the sides.

Step 6

Once the queso is fully melted, mix to make sure everything is combined. Right before serving top off the cheese with the Pico de Gallo.

Step 7

Serve with tortilla chips and enjoy!
