My wife, Jessica, and I are aficionados and fanatics. We grew up geographically and culturally separately and have lived in several very special ethnically diverse cities ranging from the South Bronx to Upper Michigan to San Francisco. We now live in a very ethnically challenging hometown high on the Continental Divide and at least 150 miles and several startlingly high passes away from "cuisinization". So we rely on the internet and the mails for any special or unique ethnic treats. We search and order seeking one of our most treasured "treats" -halvah- in several of its forms and names and origins from around the world, via the internet. We are not wealthy, so we are of necessity particular. Greece -consistent and sometimes magical, especially in its imaginative and delicate use of honeys. But then it is, after all, the home of the "gods" and comfortable in its subtlety. Certainly Turkey for its essential reliance on basic flavorings of vanilla and pistachio. Disappointingly, Israel for its arrogant presentation of a fine product seemingly produced with little love. I have even been ignored and consequently insulted when I asked their embassy to approach Achva company which had provided us with a case (a real "splurge" of trust and dollars on our part) of slightly rancid simple vanilla halvah that I painfully discarded. A real test of my respect for that challenged and otherwise courageous country. Admittedly, another of its halvaesque products - plain and simple - turned out exquisite and left me with very mixed reactions to the state of halawah in the State of Israel. But Lebanon - yes! Its varied ethnic cultures and its fabled history tend to produce the most reliably wonderful halweh. We have always been at the very least satisfied, and sometimes magnificently so, at the taste and perfect texture of what they appropriately treat as it should be treated - a basic food fit for man and gods alike. In summary, Joyvah Halvah, especially with the redundant sweetness of chocolate marbling or coating, is a child's candy. This particular Ziyad Turkish halawah is even more deceptively named and is merely a "fudgy" candy with a hint of sesame. As noted, it falls far short of Turkey's proud heritage and its quality "halva" - it is not -as titled - "traditional" in any way. You must search, my friends, and choose well, and never assume consistency or trust one of halawah's many misnomers. I would recommend you begin in Lebanon, or perhaps Greece. But this Ziyad "traditional" is a product disloyal to its name. Most sincerely Gregory
