    • Drain liquid, rinse well To remove brine & pat dry. Serve cold:artichoke hearts are delicious in green salads or as a basis for anattractive salad plate. Marinate in olive oil & red wine vinegar; serveon a bed Of lettuce w/shrimp, crab meat or bay scallops toppedw/mayonnaise. Use artichoke hearts in an italian salad, served w/coldcuts. Serve hot: saute over medium heat w/butter & garlic, & seasonw/salt, paprika, lemon juice. Serve w/veal or chicken. Delicious whensauteed in butter & served w/reese hollandaise sauce. Makes a tastyaddition To omelets or pasta.
