    I recall making ice cream with my momma years ago, using a machine just like this. The features of the machine are pretty simple, the design is easy to use, no real wrong way to make it work. I made a batch just last week, it turned and churned for a while, started worrying the ice cream would never get done, so I added ice and salt and kept on wating, finally the ice and salt ratio made the ice cream harden. It turned out good, it was sort of thick, I froze it and it is nice and hard now. I got a custard recipe from food network and Alton Brown, though I made a few accidental alterations, it came out all wrong, remind me not to use too much cream and half and half. The recipe you use for best result should be one you cook rather than drop and freeze. The machine is pretty simple, only a couple moving parts, it has a motor that just twists slightly and locks in place, not that it needs to lock tightly it will not move enough to worry about it. The beater and the motor are really high quality, the bucket and canister are great too, one of the best ones I have owned aside from the crank bucket I had when I was 18. I certainly would buy these and give as gifts for the family.

    Purchase came BEFORE scheduled date(s) :). Very easy instructions & use. Performed exceptionally well...had medium soft set ice cream in a short time...look forward to trying ALL the recipes that were included :). Exceptional value for the price and you get a FULL 1/2 gallon of ice cream for your money, not the ''faux gallon size'' that is now available at the grocery store...gone are those days when you could purchases full pounds, gallons, everything has been down-sized & you still have to pay full price. You also have the advantage of knowing & being able to pronounce the ingredients of the products you additives :).

    We made two freezers the first weekend- Chocolate and Vanilla. The recipes were really good. The book says not to fill the canister more than 2/3 full, but you can go to about 3/4 without overflow.

    • Now this is a question that is hard to specify an answer. See, I was raised poor, we used what we could get for the salt, Although, the rock salt performs far better and it easier to use in all. Salt is basically the same, but the rock salt crystals makes the ice cream better than table salt and tends to do the trick. As table salt is so fine it tends to take far more to get results.

    • You can use either one, although it recommends using regular table salt. If using Rock salt, be sure not to add so much that it makes the ice to hard to actually move in the bucket.

    • A little longer than it claims--if you are making rich & creamy style using eggs, then you have to let the mixture heat up (up to 1 hr), then you have to chill it completely before pouring it in the canister (3+ hours or overnight), then you have to church it in the ice cream maker (they claim 3 hours, but I found it took 5 or more).

    • 45 minutes to an hour and half, I have seen it take as long as that to be done. Also depends on how much you make in the cannister and the consistency of the batch. I use a custard recipe I found and modified from I was a chef at one time and I modified the recipe for 4 qt. ice cream makers and for taste and quality. It is a beautifully constructed machine and works really well. The ice/salt/water ratio has to be just right so the freezing process takes place correctly. 5 inches Ice, salt 1/2 inch in next, 6 inches ice, salt again, and fill to top with ice, and top with salt, fill cannister with water to drain hole. Easy, check the level of ice and maintain the level.

    • It needs to be rotated in the ice cream maker for 30 minutes which will give it a shake like texture. Pop it into the freezer for about an hour to freeze it a lil harder.
