    My great-grandmother, grandmother, mother and myself all used/use cast iron cookware. I've been accustomed to this product and have never found anything to take it's place for certain types of cooking. I bought this particular piece to cook cornbread sticks because my husband prefers the sticks over the pan cornbread. Of course, we all know Lodge makes the best cast iron products. After all, it is one of the only "Made in America" companies still producing and selling in this country.

    product is excellent overall. I still season again even though it came preseasoned. To me a good old greasing and baking does the trick. I cooks just like expected.

    If you love the crust on cornbread this is the product for you. It makes a very crispy crust all the way around but the middle of the cornbread is soft as it should be. Put the cornstick pan in the oven with oil/spray in all of the indentions when you preheat your oven By the time the oven is ready so is the pan. It is very durable since it is made of cast iron. Just don't put it in the dishwasher.

    • Corn sticks are pieces of corn bread baked in a special pan designed to make then look like small ears of corn. Some people (including Al Capp) call them corn pone, but that's an Algonquin Indian term, and there are no Algonquins in the southeast. I never heard a Southerner use it.

    • Corn sticks are delicious!!! IN a sense, it is a corn muffin stretched out long and thin, about the size of a hot dog roll. The thinner 'stick; gets more browning and produces extra dextrose (good) yielding an irresistible flavor. Cookies are greater too. Just experiment and find the right temperature and time..... write it down and crank'em out!!

    • Corn sticks look just like the shape in the hollow cut-outs. The difference in these and cornbread made in a 6,8, or 10" cast iron skillet is that each one comes out separately of course, however they are all 'crust' all the way around with a corn bread middle. If you like the crusty part of the cornbread, then you'll love these. They are the only kind of cornbread my Husband will eat, because he loves the crust. If you don't have one, buy it, I think you'll be pleasantly surprised at the taste.

    • Cornsticks are cornbread baked in individual sections of a cast iron pan. The sections are usually shaped like an ear of corn. Cornsticks are crispier than cornbread and very attractive to serve.

    • cast iron can be used on almost any direct heating element, or cooked in the oven, campfires,bbq, broiler.just about anywhere you cook. I have never ever seen cast iron get too hot, but do always use pot holders.

    • These Lodge iron trays will melt long after your oven has warped out of shape.Read and abide by the directions, they will take the heat!! Do not place them hot, into cold water (or even hot water for that fact) they may produce instant steam and scald you. Dutch or standard ovens can produce temperatures high enough to bake cornbread. A temperature from 212 up over 400 degrees F can make corn bread, just depends on the amount of carbon you like to eat. The higher the temperature the shorter the time. Just be careful... these stay very hot a very long time, and can melt some counter tops. ALWAYS use oven mittens with these pans.

    • All cast iron is cast the same way, so in a sense, yes it can withstand the heat...can the food? No, in that the corn stick and the wedge cornbread skillets need to be cooked at 425-450, not any higher, or you will have uneven brownness. Also, your food, bread or whatever you are cooking will get brown and look done, when, in fact it isn't done on the inside. The skillets can withstand up to 550 degrees, although I don't know of anything you would want to cook on that high of temp. I do use 525-530 for some things but not often. I recommend 425-450 for most anything you are cooking using cast iron because of the evenness of the browning. I've been cooking with cast iron for over Fifty years, so I've had my share of mishaps over the years trying to cook something faster on a higher heat setting.
