Thompson (The Fresh Egg Cookbook) is the chef/creator of a line of hot sauces and has authored a number of cooking books on hot sauces, spices, and more. This well-photographed collection includes an introduction on the history of hot sauce and how to work with chilies, instructions for making 32 sauces using a wide variety of peppers, and 60 recipes that use hot sauce, from drinks (e.g., Fire in the Hole Shooter) to dips to "Small Foods" (e.g., Tuna Ceviche) to barbecue. Thompson also includes useful lists of store-bought options to use in your cooking if you don't want to create a whole batch from scratch.

Verdict: Because the subject is so specific, this collection is recommended for extensive culinary collections and libraries lacking other books on cooking with heat. A good gift book for the do-it-yourself er hot sauce connoisseur.
