I used this smoker for the 1st time this week. I followed a lot of the recommendations read here - I used a .99¢ bread pan since the smoker box was too small. Fit perfectly in it's place. I bought hickory chunks and using a flat head screw driver and a hammer I broke them down into chips. Get much more for your money that way. I added a rope gasket around the door to seal it (Lowe's). When I fired up the smoker (on low) I put a layer of dry chips on the bottom while I soaked a bunch more in water. It's important not to put the burner on high or you will get fire instead of smoke. Once the smoke rolled for about 30 mins and i had a base of coals I added wet chips and dialed in the temp. Like the others, I lined the water pan with foil and extended the foil out to catch any drippings. I was able to hold 227 for most of the time. Here's a trick to get <200-230. Adjust the valve on you propane until it's almost completely off and watch the burner. You won't get there with the dampers alone. Once you get the hang of it, it's easy. I also used an oven temp probe to measure the temp. The one on my smoker wasn't too far off actually, but I like the precision of digital. I had to add chips every 90 mins, but the results were amazing. I did a rack of ribs and a 5lb pork loin. Dry rubbed ribs on the smoke for 2 hours, then wrapped in foil with 1/4 cup of apple juice for 2 hours, then the last hour on the smoker. They were amazing. Pork loin was on for 3 1/2 hours. All at about 227 degrees. Enjoy!

I have used a side firebox smoker for years and decided to go with this GOSM Smoker and a lot of reviews. It has a rating of 4.8 out of 5 over 140 reviews, thats strong. I have used it 3 times and has done GREAT, best ribs and butt I have done yet. I did however make a couple mods to it. I added a high heat fiberglass seal around the door and assed a low pressure regulator to it. Without the low pressure regulator the lowest I could get it was about 250 degr. Now with the new regulator I can get it to hold steady down to as low as 80 degr. @ major mods, but they were cheapand easy to do.

This smoker can deliver great food, but it can be a battle. I grudgingly recommend it mainly because all the similar products I have seen appear to have the same problems. I suspect they are all made by the same people and just labeled differently. This smoker suffers from three problems I have seen mentioned in several reviews of this and similar offerings: 1. It is very difficult to get the temperature low enough for good, slow smoking. Mine wanted to run at 250-300 with the vent wide open adn the gas turned as low on both the tank and the stove as possible. You want your temp between 200 and 220. 2. Shoddy assembly. The top hinge had fallen off the door and the cabinet and parts were lost. I had to purchase a number of overpriced small packets of nuts, bolts, washers, and lock washers to complete the door assembly. This made what should have been a thirty minute minor chore into a significant headache that required two trips to Lowe's. It is very sad that the manufacturer has so little pride in their work. 3. When I had the temp as low as it could go, i couldn't get the dry wood chips to produce enough smoke to adequately flavor the meat. The chip box is well-constructed but a little to far from the flame to get the chips hot enough to smolder. I will have to repace it with a thinner metal box or pie plate of some sort, or else I will have to shorten the four legs on the stand that holds it above the flame. The phots show the parts I could fine from the hinge that fell off inside the packing crate and the door standing cockeyed because there was only one hinge supporting it. Be sure you deal with that hinge first if you have the same problem becuase if you bend the door or hinge, you will never get it closed properly. Other hardware is in sealed baggies and was all present. All other parts of the assembly were simple and routine and no other parts were missing. Despite the battle, my first (and so far, only) use of the stove was on a very large pork shoulder. It tasted fine, but never got to the internal temperature I wanted, even after 18 hours inthe smoker. I finally had to pull it out at an internal temp of 164 and stick it in the fridge so I could go to church. When I got home, I stuck it into a crock pot on high for a couple of hours and got the internal temp to about 184. It was moist, very tasty (although not as smokey a flavor as I wanted), and cooked done enough to be safe to eat.

I've had this smoker for a couple years and does a great job. Two things I might suggest is the little smoker box is to small. I use a bread pan (On lower left in photo ) and use charcoal to smoke the wood, does a better job smoking and it is easy to add wood to. I use aluminum foil to line the water pan and large enough where it go to the sides and back where it will funnel the dripens into the water pan. I added a photo

I didn't have some of the problems others mentioned. I received all my screws, etc. Some reported that this smoker ran hot (about 275-295, F). OK, it runs hot when it's empty, but when it has food and water in it, mine stays about 235-255 (digital thermometer), even in the Florida Summer sun, which is about perfect. If you're wanting to do a slow 18 hour smoke at 170, F, you might want to smoke your roast for 2-3 hours in the smoker and finish it in your oven at a lower temperature. The accuracy of the door mounted thermometer apprears reasonably accurate. But, what the heck, Walmart sells a wireless thermometer for about $15.00 in the grilling department. Use it to check the smoker temperature at the beginning, then push the probe into the meat later. Because it's a propane smoker, it stays cleaner (and is easier to clean) than a charcoal smoker. A charcoal smoker, however, may impart better flavor. It's hard to tell, as I've only had this smoker for a month and I'm still getting use to it. Propane is certainly easier to get going and control. My wife calls me Smokin' Dave (but I don't think that relates to the smoker).

  • A. Yes, It does have a temperature gauge on the door. I was actually surprised as to how well it worked. I purchased an oven thermometer for 5 bucks to throw on the rack as well, but don't seem to need it much.

  • A. Yes, it's door mounted and reasonably accurate. But for about $15.00, you can get a wireless thermometer from Walmart (they keep them with the grilling supplies, not kitchen supplies).

  • A. Yes, but I purchased one to use inside the smoker that I trust and it reads about 50 degrees cooler than the one provided on the door of the smoker. I always check the inside temperature of the meat before I serve it to ensure that the temp meets the requirement for the meat type. Don't want any parasites you know!

  • A. A 12 pounder will fit -- make sure you brine the bird first for a couple of days -- and when you smoke it that the internal temperature in thickest part of the meat is above 165 degrees and below 175 (temp. above that will dry out the meat)... Try wood from fruit trees like apple or cherry

  • A. The second "thing" I smoked in mine was a big $30 turkey. Hung it by the feet and smoked on medium for 8hrs. That gave a temp inside the breast meat of 165*F. Probably could have let it go another hour, but it was great.

Warranty Information: The Great Outdoors Smoky Mountian Series Smoker is guaranteed against broken or damaged parts at the time of purchase. The cast brass burner is guaranteed for 10 years. All other parts carry a 1-year limited warranty excpet the water bowl, which is guaranteed to be free of defects for 90 days. Paint is guaranteed to be free of defects for 90 days except for rust, which may appear after repeated use. This warranty does not cover damage or issues related to neglect, abuse or modifications to the product. repair labor is not covered. All parts that meet the warranty requirements will be shipped at no charge vis the discretion of the Customer Service Department (ground shipments, US Mail or Parcel Post only). Any special handling charges (i.e. Second Day, overnight, etc.) will be the responsibilty of the consumer. All warranty claims apply only to the original purchaser and require a proof of purchase verifying purchase date.
