Smith started a popular web site devoted to pressure cookers (Miss Vickie.com) in 2001; this is her first book. The impressively detailed introductory section is more than 100 pages long, covering the history and science of the pressure cooker, basic and advanced techniques, troubleshooting, and more. Then Smith presents almost 400 recipes for all courses of a meal, with a separate chapter on breakfast. Most are for old-fashioned, hearty comfort food, though there are some more contemporary dishes and many familiar classics. Lorna Sass's pressure cooker books (e.g., Pressure Perfect) include more sophisticated recipes, but Smith's thorough introduction makes her book a useful reference. For larger collections.

Rated 5 out of 5★ by FOR THOSE WHO HAVE AN ELECTRIC PRESSURE COOKER Using a non-standard pressure cooker that operates at only 12psi means that the timing will have to be increased by 20%. No big deal. Just a key point she makes in the book to keep in mind if you are using an electric pressure cooker. The essential tip in the book for me as a beginner in pressure cooking and having an electric pressure cooker. 10/08/2011

There are alot of recipes my family and I have used and will use. The cook book gives you a cooking chart on how to cook just about any thing.
