Background: I am a certified chef and have been smoking meats in various capacities for over 35 years. I have owned electric, gas, charcoal, wood fired, and even built a smoker or two, for bbq competitions. Yes, I have turned out excellent meats over the years, but since retiring I have gotten away from it all. I saw this roaster in Walmart and a friiend had told me about how good it was. I bought it just to see and I am here to tell you... IT IS WITHOUT A DOUBT THE BEST HOME SMOKER I have ever owned. I cannot see how it can work this efficiently, but if you follow the instructions.... you will be in for not only a shock to the taste buds, but addicted to dreaming of the next thing you can smoke tomorrow. so far I have smoked sausages, brisket, chicken, turkey, fishes, cheeses, jerky, and even cooked a casserole in it to see what happened... smoked tuna casserole, well you decide! my closing thoughts are.... BUY ONE IMMEDIATELY... yes the cord is short but a 20 guage entension carries the load....

So it's January and cold and raining and I'm so glad that that I bought this this smoker because (against recommendation) I use this inside on the counter next to the window. One added bonus is the light sweet smell of smoke in the air and whatever meat is smoking. Almost smells like roasted marshmallows. Most if not all my smoking is a multi-step process whether its brine, sous vide, rub or glaze so it makes it suer easy to go from kitchen to counter. So far I've re-smoked a spiral ham, (amazing with pineapple juice and slices), pork ribs, turkey legs and I have some beef ribs smoking as we speak. The super amazing pull off the bone smoked texture is some of the best I've ever had. Most things are smoked @ 225˚ and super amazing. Being unexperienced @ the lowest temp 150˚ I don't think any smoke is produces and it's tough to get a high humid environment at those low temps. If you are attempting to smoke in these conditions you probably need a different smoker, but maybe I just don't know what the heck I'm doing. As other reviews have said the chord is extremely short, but it's the perfect length on the counter next to a window. I just put a small personal fan blowing past the vent pointing towards the window. I also only crack the vent just a sliver. Anyone who has ever bought heavy-duty 14 gauge jumper cables knows how expensive they can be and IMO I would rather the small cable at a lower price point with the option to get an extension. The manual says " Use only a heavy-duty 14 gauge 3-wire grounded cord not more than 12 ft. long."

I had real misgivings about this when we first saw it. I didn't see how a roaster could become a smoker by just adding two little bins that hold wood chips. Since there is no flame, how could the chips become hot enough to smoke? We saw this in the store and it was on sale, so we thought we would try it even with my doubts that it would work. I'm really glad that we did! This is an awesome, easy to clean smoker that truly turns the wood chips into black smoking chunks that permeate the food with delicious flavor! Best of all, it is easy to clean! We smoked a 26 lb. turkey to perfection in just a few hours. I honestly thought that the wood chip holders were just a gimmick and that we'd be using this as a pretty roaster (it is red). Instead, my mouth is watering thinking of the next thing that we'll smoke in it. I can't wait to try some ribs!

Walmart Site to Store worked great. Got it in a few days, not a week. Good packaging, not a ding or dent. Set it up outside on the deck patio table, connected it with a 12 ft heavy gauge outdoor extension cord. Roasted and smoked a thawed 12 lb turkey that I brined overnite in a salt/sugar mix. The inside easily fit my turkey, I can see a 20 lb turkey going in there next time. Here's the amazing part, it actually cooked the turkey to 180 degs in 2 hours. Amazing! Normally a 12 lb turkey takes forever. 2 HOURS! I saved money on electricity and what was supposed to be dinner was ready for lunch. This thing will pay for itself in no time. I had cranked the temp up to 450 for 30 minutes to brown it, then lowered to 350. Was perfectly and thoroughly cooked, moist not dry and skin was browned. Beautiful! Smoke flavor was awesome, loaded both bins with hickory chips and the chips were almost ash after 2 hours. Lid sealed that smoke in well. Getting the turkey out of the roaster was simple thanks to the included rack. The handles are "stay cool" as well. Control is easy with a big rotary dial. Cleanup was a breeze, I had sprayed the inside and the rack with PAM and everything wiped right off. Its big, too big for a kitchen cabinet, so it's stored in the closet. Love this. Can't wait to do some ribs, chicken, pork and beef.

I wish I'd have read the reviews before purchasing, but didn't feel the need as I have never had issue with Oster products. The length of the cord for an appliance such as this, is ridiculous! I have limited cooking space and my roaster ovens (I have a few) in my laundry room. However, with the short length of the cord, this product is basically useless to me. To tell me to use an extension cord is unacceptable.

Got this roaster oven on clearance, as I believe it is being discontinued. The idea of it is great. It's basically a generic roaster oven that has somehow been wired to heat two built-in metal pockets that hold a handful of wood chips. I was skeptical though, as through the years I have gone through a number of contraptions like this that claim to smoke and maintain temperature and this one seemed too easy. Well, I have to say that this thing worked just as advertised. I added chips, dropped in a rack of rubbed spareribs, (along with some apple juice for flavor/moisture) and set it to about 240 degrees. Three hours later I pulled out ribs that were smoking pink. I threw them on the grill for about 15 minutes with sauce and then served some of the best tasting barbecue I've ever made. I didn't even have to watch it, as I trusted the oven to keep a steady temp and it did. It just can't be any easier to smoke something and the clean-up is as simple as washing the pan and rack. Only drawback is the VERY short cord but since it has to be outside for smoking anyway it's not a big deal. Keep in mind that this also serves very well as a cooker/roaster when you are serving a big meal and there's no room in the oven. It can even bake biscuits!!

I was waffling about buying this unit, looked at the design and said what the hay. I am so happy I purchased this smoker/roaster combo. It did what it advertised. I smoked a 5 lb pork butt with oak chips, extremely efficient smoker, minimal use of chips with appropriate smoke. Cooked at 200 degrees for 8 hours, incredible pulled pork along with a excellent bark. very moist. Not over or under smoked. I like this unit so much, I intend to go back to Wal Mart and buy another one for backup before the model disappears. Seems like every time the manufacturer gets it right, they discontinue the model, reference the Oster Kitchen Center.

I purchased this item at the local Wal-Mart on black friday. Follow the instructions and you can't go wrong. Three and one half hours at about 240 and my two racks of pork ribs were perfectly smoked and ready to fall of the bone. They also stayed very moist. Looking forward now to the turkey and brisket when I have some more time.

I love my Oster Smoker/Roaster. It arrived the day before Christmas! I researched this type or product thoroughly before buying it, and I highly recommend it as being exactly as advertised. The instructions in the manual are easy to follow, and my husband and I love the smoked taste of our food. Really a great product for the money.

I borrowed a friends smoker becuz i am not a good cook or very donesticated but had a 15# turkey i wanted to smoke. It was the easiest thing to do, even though i was afraid it would be raw or over cooked. Anyone can do this! Highly recommended!

I used my oster 16 quart smoker roaster yesterday for the first time. It worked perfectly! I used it outside plugged into a 14 gauge ext. cord. It was 25 degrees out at the time. I filled up the two smoke pockets with apple chips putabout an inch of water in bottom of pan and set it at 350 degrees. Put in a large roasting chicken that I had brined for 8 hours. Within 10 minutes the wood chips were smoldering and the chicken was done in one hour and 15 minutes! The best part was I lifted lid on my grill and set in on the grate and when I was done could set the lid upside down and could close hood on grill. Perfect storage place. I am going to buy another to make sure I have parts in the future!

I purchased my smoker/roaster directly from Oster (a lot cheaper than Amazon!) and received it today. I smoked a 3.5 lb. chicken for 2.5 hours and then closed the vent and adjusted the temp to 350° for about 15 minutes. The chicken was very good! Nice smoke flavor. I’m planning on trying a 10 lb. pork butt next. Ordinarily on my large smoker it takes 10 hours to smoke…not sure how long it will take in this smaller smoker though. I loved how easy it was to clean afterwards! I’d like to add that I had posted a question either on Oster (prior to me receiving my smoker/roaster), asking if I could add more wood chip mid cooking and to clarify that the wood chips would need to be dry (not soaked). The answer that I received was “Do not add wood chips to the roaster while it is in use or mid cooking. Yes, your chips must be dry before adding them.” -- I just want to clarify for others that on page 11 of the manual book included with it, it clearly states “Placing 1/3 cup of dry wood chips into each of the wood chip bins is good for about 1 hour of smoking. Proceed to refill wood chip bins for longer smoke times.” So if anyone else is interested, YES you can add more wood chips for a smokier flavor. I’m giving it a 4 star because while the unit itself is nice and sturdy, the actual lid feels like cheap aluminum. Not as good of quality as the rest of the unit. Also the cord is extremely short. The cord really isn’t a big problem because all you need to do is use a really good 3-prong grounding extension cord.

I just got it in the mail today and immediately started smoking a chicken. I have the temperature dial set at 200 and I stuck 2 different thermometers in the vent and the real temperature is 253. Its wayyyyy off, don't trust the dial. Also it would be nice if the kid had a better seal most of the smoke leaks around the lid and not thru the adjustable vent.

My husband and I LOVE this little smoker. I keep packed in a plastic waterproof container on our porch so that I can use it when I want. It's compact and easy to use. Yes, it has a 12 inch cord, but you simply buy an outdoor extension cord. HELLO! You don't return it because of that! It takes 20 minutes to smoke salmon, and 45 minutes for ribs. Of COURSE they'll burn if you turn it up to high! It goes up to 500º, so turn it down to 200º. Use your judgment as to when your food if done, not what the book says. Buy a meat thermometer for roasts and turkeys.
